With summer right around the corner (and my annual girls trip to Miami), I've been trying my best to exercise and eat healthy! I've turned to the trusty Pinterest for some healthy recipes to get my body ready for the beach. This salad is perfect for lunch and if you want it for dinner, I would add some grilled chicken or fish.

Salad:
2 cups cooked quinoa
3 cups chopped kale
1.5 cups edamame beans
1/2 red onion
1 mango
1 avocado
2 tablespoon roasted almonds

Vinaigrette:
2 tablespoons olive oil
1/4 cup fresh lemon juice
1 garlic clove
1 large basil leaf chopped
1/8 teaspoon salt
fresh ground pepper to taste

Directions:
Dressing: Place olive oil, lemon juice, garlic, basil, and salt in blender or food processor. Blend or process for 10-15 seconds.
Salad: In medium bowl toss kale, quinoa, edamame and onion together; add lemon vinaigrette and toss so salad is fully coated. Refrigerate for 20-30 minutes to let flavors soak in. Before serving add mango and avocado. Garnish with roasted almonds if desired. This makes a HUGE batch and will last you all week!
